Breakfast for the busy: Bircher Muesli and spiced fruit salad

I am a big fan of holistic nutritionist and vegetarian chef Sarah Britton’s blog, My New Roots. Beautifully photographed and well written, her posts offer nutritional information that goes beyond the rote, into deeper and more detailed information regarding the function of the ingredients in her recipes. And about those recipes…anything I have ever made from her blog has made it into my regular rotation.

I knew I hit on an absolute winner with her Bircher Muesli and Spiced Strawberry Sauce recipe when I sent my husband to work with a jar of it and when he got home he asked, “You know that breakfast you made this morning? Can you make it every day?”…I have actually made it about ten times since, never the same each time, and we both love it.

I love that I can quickly get the breakfast oats soaking overnight just before bed and then quickly prepare it in the morning.

For this recipe I have used vanilla flavored almond milk or coconut milk, and sometimes I add dried blueberries in with the oats, milk and chia seeds to soak overnight.

I made the Spiced Strawberry Sauce once, and since then I have taken it in a few different directions. Most recently (and most yummily), I made a fruit salad of mangos, blackberries, raspberries and strawberries, drizzled maple syrup and vanilla over top, sprinkled some vanilla and cardamom, and stirred in a star anise. The flavor by morning can only be described as gorgeous.

I layer in the jar a few large spoonfuls of muesli, then Greek yogurt, flax seeds, almonds, then another layer of all the same. An amazing start to the day that sees me through to lunch with no hunger pangs.
